This dark saison spent 10 months in a freshly emptied ex. Canterbury wine barrel on top of Canterbury raspberries and Otago sour cherries. We also pitched a blend of brettanomyces which brings some background complexity to the beer. This beer is all about showcasing south island produce. No bacteria was pitched into this beer - all the acidity is coming from the fruit, emphasized by a complete fermentation.
Taste Notes
Dark saison with a complex malt base - some dark fruit notes - figs, dates. Medium-high malt sweetness on the nose along with cherry and raspberry. Colour is a deep amber, high carbonation. Flavour brings more fruit - sour cherries dominate here, some raspberry in the background. Medium acidity, low hop bitterness, balance is more sweet/sour. Finish is tart + dry with some barnyard brett complexity.
